One Pot Jambalaya
Looking for a quick meal that doesn’t use a ton of dishes? This jambalaya is the perfect easy weeknight dinner! Feel free to substitute any vegetables for whatever you have on hand- frozen works just as well as fresh!
Ingredients
8 oz. box of Zatarain’s Jambalaya
2.5-3 c. water
2 c. frozen okra cut in slices-(circles)
1 large onion diced
1 green pepper diced
12-16 oz. smoked sausage diced
1 can dark red Kidney beans, rinsed
1 pak choi diced, optional
Instructions
Mix all ingredients together in dutch oven or large pot and simmer about 25 minutes, until rice is tender. Enjoy!
