Miss Margaret’s Vanilla Refrigerator Cookies

This recipe for Vanilla Refrigerator Cookies written by Mr. Jim’s mother, Miss Margaret, puts a fun twist on a classic sugar cookie! Colorful and easy to make, these cookies are sure to become a part of your Holiday traditions for years to come!

Miss Margaret’s Vanilla Refrigerator Cookies

1 cup shortening
2 cups granulated sugar
2 eggs, well beaten
2 tsp. vanilla
3 cups sifted flour
1 cup chopped pecans
1 tsp. baking soda
1 tsp. salt
1 ⅓ cup quartered green and red candied cherries

Cream shortening and sugar. Add egg and vanilla. Sift together dry ingredients. Add to mixture, saving a little for coating. Coat fruit and nuts with flour and add to the mixture. Make out in rolls 1½” in diameter. Freeze. Slice. Cook at 375 degrees for about 10 minutes.
