Miss Judy’s Sweet Potato Pudding

Sweet Potatoes are a tried and true favorite Carolina crop. Our dear friend Don Bennett has provided Sweet Potatoes to the Nursery for the season and they are delicious! Sweet Potatoes are versatile and can be used in a number of ways to create yummy dishes everyone looks forward to! Miss Judy’s Sweet Potato Pudding is easy to make, satisfying, and delectable both hot and cold! Here’s how to create her classic recipe.

Miss Judy’s Sweet Potato Pudding

Servings: 8

Prep Time: 30 minutes

Cook Time: 1 hour


5 cups cooked, mashed sweet potatoes

1 Cup White Sugar

1/2 Cup Brown Sugar

3 eggs

1/2 cup evaporated milk

1 15-1/4 oz. can of crushed pineapple

Grated rind of one orange

Juice of two oranges

1 tsp. cinnamon

1/2 stick of margarine, melted

Mix eggs and sugar. Add margarine. Combine with the remainder of the ingredients. Bake at 350 degrees for 1 hour. 

And there you are! Enjoy this delicious treat hot or cold with a tall glass of milk or a nice cup of tea with milk and sugar.
