Stuffed Peppers
1 lb. ground beef or turkey
½ med. onion diced
1 large or 2 med. tomatoes or 7 oz canned diced tomatoes
1 Tbs. Worcestershire sauce
1 tsp salt
½ tsp black pepper
2/3 c. cooked rice
Dash of hot sauce
½ c. shredded cheese
8 peppers- green or red
Brown meat in a saucepan- separate it into crumbles as it browns. Spray a 9×12 pan with cooking spray. Cut peppers in half longways and take out seeds while the meat is browning. When brown, drain the liquid off. Add the rest of the ingredients, except cheese to the saucepan and cook for 5 minutes. Lightly salt the inside of peppers. Fill with meat mixture, cover with foil and bake at 400 degrees until peppers are cooked and soft. Take out and sprinkle with cheese. Put back into the oven uncovered and bake another 5 minutes or until cheese is melted. Serve. 8 servings
