Ingredients:
- 3 cups fresh or frozen broccoli, cut into bite-sized pieces
- 1/2 cup water
- 1 teaspoon salt
- 2 tablespoons cornstarch
- 2 1/2 cups milk
- 2 tablespoons margarine
- 1 cup Velveeta cheese, chopped
Instructions:
- In a 2-quart casserole dish, combine the broccoli, water, and salt. Cover with a tight-fitting lid or plastic wrap.
- Microwave on high for 10-12 minutes, or until the broccoli is tender. Carefully remove it from the microwave and chop it as desired for texture.
- In a separate bowl, whisk the cornstarch with the milk until smooth, then pour this mixture into the casserole dish with the broccoli.
- Add the margarine and Velveeta cheese to the dish.
- Microwave uncovered on high for an additional 10-12 minutes, stirring every few minutes, until the soup thickens and reaches a creamy consistency.
