Servings: 3-4

Ingredients:

  • 3 cups fresh or frozen broccoli, cut into bite-sized pieces
  • 1/2 cup water
  • 1 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 1/2 cups milk
  • 2 tablespoons margarine
  • 1 cup Velveeta cheese, chopped

Instructions:

  1. In a 2-quart casserole dish, combine the broccoli, water, and salt. Cover with a tight-fitting lid or plastic wrap.
  2. Microwave on high for 10-12 minutes, or until the broccoli is tender. Carefully remove it from the microwave and chop it as desired for texture.
  3. In a separate bowl, whisk the cornstarch with the milk until smooth, then pour this mixture into the casserole dish with the broccoli.
  4. Add the margarine and Velveeta cheese to the dish.
  5. Microwave uncovered on high for an additional 10-12 minutes, stirring every few minutes, until the soup thickens and reaches a creamy consistency.
  6. Let the soup cool slightly, then serve and enjoy the flavors of Judy’s favorite recipe!
