These stuffed peppers are easy to put together, packed with flavor, and make a fantastic weeknight meal for the whole family.

  • Prep time: 15 mins

  • Cook time: 30–35 mins

  • Servings: 8 (half-pepper portions)

Ingredients

  • 8 green or red bell peppers

  • 1 lb. ground beef or ground turkey

  • ½ medium onion, diced

  • 1 large tomato (or 2 medium, diced), or 1 (15 oz) can diced tomatoes

  • ⅔ cup cooked rice

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt (plus a pinch extra for seasoning peppers)

  • ½ tsp black pepper

  • Dash of hot sauce

  • ½ cup shredded cheese (Cheddar or Monterey Jack work great)

Instructions

  1. Prep the Oven & Pan: Preheat your oven to 400°F. Lightly spray a 9×12-inch baking dish with cooking spray.

  2. Brown the Meat: In a saucepan over medium heat, brown the ground meat, breaking it up into fine crumbles as it cooks. Once fully cooked, drain any excess liquid.

  3. Prep the Peppers: While the meat browns, cut the peppers in half lengthwise and remove the seeds and membranes. Lightly sprinkle the inside of each pepper half with a pinch of salt.

  4. Combine the Filling: Add the diced onion, tomatoes, cooked rice, Worcestershire sauce, salt, black pepper, and hot sauce to the saucepan with the drained meat. Stir well and cook for 5 minutes to let the flavors meld.

  5. Stuff & Bake: Spoon the meat mixture evenly into the prepared pepper halves and place them in your baking dish. Cover the dish tightly with foil.

  6. Bake: Bake covered for 25–30 minutes, or until the peppers are tender and soft.

  7. Melt the Cheese: Remove the foil, sprinkle the shredded cheese evenly over the top of the peppers, and return to the oven uncovered for 5 minutes, or until the cheese is melted and bubbly.

  8. Serve: Remove from the oven, let cool for a couple of minutes, and enjoy!

While your peppers are finishing up in the oven, pair them with corn on the cob!

  • Prep: Trim both ends off the ear of corn and remove the tough outer shucks.

  • Cook: Microwave 1 ear for 4 minutes or 2 ears for 5 minutes. Carefully remove shucks and silk, add butter, season, and serve hot alongside your stuffed peppers.
